Easy Vegan Pho
















The first time I ever had Pho, like most people, I was blown away.
What was this goodness in my mouth? Was it soup?
Was it pasta? No, it was pho.
 I walked into this tiny little place in downtown Reno.  "Holy heck , it is packed!" I said out loud.
The place wasn't too ascetically appealing and I wasn't sure what I was getting myself into.
The lady asked how many, we said two. She walked us over to this tiny table and we sat. 
I opened up the menu and there was like 30 different kinds, or ways to eat, of pho.
"Ummm do you have a vegan one?' I asked. "Yes!" she proclaimed. 
She turned the page and there ,in all it's glory, was like 5 different types of vegan pho. 
I asked for the first one, not really knowing what it tasted like or what it would be like. 
We waited for our food and within minutes we were served.
"Okay, lets try this" I thought. Grabbed my chop sticks and dug in.
Took a bite and "HOLY MOLY, THIS IS BOMB!" I said out loud, maybe too loud.   
I didn't even talk after that. 
I kept adding Sriracha and shoving it in my mouth. 
My life was changed. How could something so simple be so life changing delicious? No meat,
no dairy, and unreal. 

I've been craving this for a long time and since I'm not in Reno anymore, I can't
just go to my favorite place. 
So I did what any other person would do, make it at home.

This was the easiest Pho ever.
It may not be exactly the same, but it's my way and fulfills every craving. Yes, Every single craving. 
It's actually a bit chilly here, so this hit the spot.

What You'll Need:
1) Vegan Broth ( or make your own)
2) Rice Noodles
3) Lime
4) Cilantro
5) veggies of your choice 
6) a bit of soy sauce ( I use Gluten free and Low sodium)
7) salt, pepper, and ginger powder
8) Peeled Garlic 
9) Green onions 

5 Easy steps:
1) make the pasta in one pot
2) add all ingredients to second pot and bring to a boil for a couple of minutes 
then let simmer for a bit. Keep taste testing until you are satisfied with the flavor
3) add broth to a bowl and then add your rice noodles
4) add lime or extra garnishes 
5) Eat and Enjoy! 

This meal was super cheap, 
and it made enough soup for two for a couple of days.

One of my favorite juices for a Juice cleanse


Are any of my friends starting the new year on a juice cleanse ? 
Or just adding more fresh, cold-pressed juice in your life? 
Well here is a recipe for one of my favorite juices! Okay, don't freak out when I tell you what's in this. Just juice it, drink it and tell me what you think.

I'm telling you guys, I LOVE LOVE LOVE this juice. I could
drink it every day, all day, if I had the time to juice every day, all day. 

Okay so here it goes... Ready? P E A R S & PURPLE CABBAGE!
ahhh, there I said it. Sounds a bit scary right?
Pears is awesome, but then I hit you with the purple cabbage and OMG, a little intense. I know.
Anyways,  try it before you knock it and I truly think you'll be pleasantly surprised.

So here is what I do:
1) Juice an entire head of Organic purple cabbage 
2) Juice 4 Organic pears... add a couple if its still not sweet enough. 

THAT IS ALL YOU GUYS. 
THAT'S IT. 

The benefits of purple cabbage are unreal. 
Think antioxidants... Clear skin... weight loss... Vitamin K....
Vitamin C... Iron... and so much more! 

Pears have a ton of health benefits also, but the important part 
is that they just taste amazing. 
RIGHT?! mmm, sweetness come to mama. Love me some Sweet fruit. 

When you combine the two, you're looking at a world of antioxidants!

Happy 2017! Time to jump on the Juice Cleanse...




Happy New year everyone! 
It's January 1st and today is the day MANY of us will start doing something new. Working out, juicing, cleaning, joining a gym, or whatever else. Many peoples new year resolution usually consists of eating healthier and losing weight or toning up.
My new years resolution is all of that and more. The first thing i'm working on though is juicing more. If you have followed old blogs, old FB accounts and or Instagram account then you know i'm a HUGE juicer. I haven't really done much juicing lately and miss it terribly. I was lighter, my skin was clearer, I was just happier with my health.
I've been eating so much processed foods, I'm so excited to jump back on the bandwagon. 
If you follow my instagram you will have seen that 1915 Organic Juice sent me some goodies which really inspired me to do more juicing. I really enjoy their juices, i'm really a huge fan. They taste amazing, they're not crazy expensive, and they're organic//cold pressed. Anyways, I really encourage you all to drink ONE juice a day. Try to drink juices with more greens than not, but if you're beginner then just start wherever, but JUST START. 
Add your E-mail to get notified when I post new content because I will be posting recipes to some of my Favorite juices, if you're juicing at home. 

Please Remember:
If you're going to juice at home, use ORGANIC fruits and veggies. Follow the dirty dozen rule and  Wash your produce throughly.

You can juice at home but if it's not a good juicer it's just burning all the nutrients and all you're really getting is SUGAR. 

I own a kuvings juicer. And though it may be expensive , it has a slow RPM and it's a masticating juicer. It's easy to clean and has a big mouth so you can throw an entire organic apple in it if you wanted to :) . 


Try and stay away from centrifugal juicers. They juice at very high Speeds and destroy nutrients. 

Anyways, the big point of juicing is to give your kidneys a break from breaking down so much fiber . Imagine running on a treadmill and never get a break. 

At some point you'll just stop and possible pass out. 

We don't want our organs to one day just give out. Juicing is great way to give our organs a little break to heal and recover . So who wants to start incorporating juicing with me ?!


Basically, for 30 days we all will drink a juice instead of a meal. Whether it be breakfast, lunch or dinner. This will allow your body to reboot. I personally like to drink a juice first thing in the morning so I can have a nice lunch and dinner. The body absorbs nutrients differently depending on when you ingest it. 
Mornings seem to be the best time to take vitamins and nutrient packed food because 
the body will absorb more nutrients on an empty stomach. 

Anyways, I'm so excited to go on this journey with many of you. 
Can't wait to hear your stories on how much juicing has helped your mind, body, and soul in 30 days. And hey, if you want to incorporate more juice in the day, then YAH! do it! 
But at least start with one every morning.
